L'influenza sul gusto della maturazione in legno

Triterpenoidi dolci e amari da legno di quercia

Una nuova classe di composti e la loro distribuzione in Quercus robur e Quercus petraea

Come noto, il periodo di maturazione del vino in contenitori in legno – frequentemente ottenuto da piante di quercia – ne modifica profondamente bouquet e gusto, sia per la moderata ossidazione dei composti del vino sia per il rilascio di molecole da parte del legno. La ricerca ha identificato i principali composti volatili provenienti dalla quercia: vanillina, β-metil-γ-ottalattone, eugenolo e 2-furanmetantiolo. Questi composti volatili spiegano in larga misura gli aromi di vaniglia, cocco, spezie e caffè tostato tipici dei vini affinati in legno. Inoltre, la quercia rilascia composti non volatili che possono modificare il gusto del vino e le sensazioni tattili, in particolare la percezione tannica (struttura e astringenza) e dell’amaro, così come il volume e il dolce. Molte ricerche si sono concentrate sugli ellagitannini, una specifica famiglia di tannini rilasciati dal legno, di cui sono state studiate le proprietà sensoriali (amaro e astringenza) e determinate le soglie di percezione. Sono stati inoltre identificati i prodotti dell’interazione tra ellagitannini e flavonoidi dell’uva nel vino rosso, che potrebbero essere coinvolti nel mutamento di colore del vino durante l’affinamento. Oltre agli ellagitannini, altri composti non volatili vengono rilasciati dal legno di quercia, come per esempio cumarine e lignani. Tuttavia pochi sono i dati a disposizione sulle proprietà sensoriali di alcuni composti non volatili, in particolare le componenti dolci del gusto. Vari parametri, come l’origine geografica del legno di quercia o le tecniche produttive delle botti, possono influenzare la composizione del legno e quindi il suo effetto sul gusto del vino. Alcuni bottai classificano le qualità del legno in funzione della loro morfologia. Tuttavia, diversi studi hanno dimostrato che la specie è un indicatore della composizione chimica migliore rispetto ai parametri morfologici o alla provenienza. Due specie di querce europee sono principalmente utilizzate per la produzione di botti e si trovano insieme nella maggior parte delle foreste francesi: Quercus petraea Liebl (quercia da rovere o quercia sessile) e Quercus robur L. (roverella o quercia peduncolata). Come riportato da vari Autori, i livelli medi di β-metil-γ-lattone ed ellagitannini  sono rispettivamente più alti e più bassi nella quercia sessile rispetto a quella peduncolata. Ma all’interno di ogni specie si osservano forti variazioni tra individui diversi, che influenzano profondamente il valore dell’effetto specie. Ad esempio, A. Prida et al. hanno dimostrato che alcune querce sessili presentano bassi contenuti di β-metil-γ-lattone, nel range rilevato in quelle sessili. Una situazione simile è stata descritta per gli ellagitannini. I composti volatili e gusto-attivi non sembrano specifici né per le querce sessili né per le querce peduncolate, e la quantificazione del β-metil-γ-lattone o degli ellagitannini in campioni di legno non consente discriminazioni tra le specie di querce. In questa ricerca vengono riportati i dati relativi all’identificazione di una nuova classe di composti dolci presenti nel legno e alla loro distribuzione in Quercus robur e Quercus petraea. Tali dati hanno permesso, tra l’altro, di stabilire un metodo per discriminare in maniera certa le specie summenzionate.
